Peanut Butter Chocolate Rice Krispie Treats

Oh My Goodness!

 

I was wasting time on IG the other day and stumbled upon a recipe for a dessert that looked really good.

 

Why did it look good? Good question!

 

I tend to look for recipes that meet these specific criteria:

  1. Have minimal ingredients, that can be swapped out for healthier things
  2. Don’t take a long time to make
  3. They look like they’re going to taste fabulous!

 

I enjoy cooking & baking and I look forward to watching Todd’s expressions when I try a new recipe on him. I try hard to make healthy foods and treats but sometimes it’s just not possible.

 

Now that we work from home, it’s so much easier to make homemade meals instead of going out to eat as we were accustomed to. With the price of everything going up so fast, I’m not much more motivated to get creative. Besides, I love the aroma of food cooking in the kitchen and, I enjoy knowing I did it. There’s a sense of accomplishment I feel, and I often reflect on my mom in awe of how she managed to cook for 10 and care for us all so well. My mom was an excellent cook, and she was quick! She could whip up a meal fast. Thankfully, I also have this trait.

 

Food is one of the simple pleasures in life. We must find ways to take ordinary meals and make them dance on our tongues. With that being said, this is a recipe I recently concocted, and everyone has LOVED IT so far. I hope you enjoy it as well!

 

Side Note: I tweaked the ingredients on the original recipe I found. I “Linda-ized It” and added marshmallows as I was thinking of Todd and how much he likes Rice Krispie treats. So, this was made with love for my sweetheart.

 

Ingredients:

  • 1 1/4 cup of PB
  • 1 tbsp of honey
  • 1/2 - 3/4 cup of Rice Krispies
  • Dark chocolate baking chips
  • 1 cup of Marshmallows
  • 1-2 tbsp of grass-fed butter
  •  

Directions:

  • Combine PB with honey and stir until blended
  • Add Rice Krispies
  • In a saucepan, melt butter then add marshmallows
  • Add to peanut butter mixture and combine well
  • Lay out parchment paper and start shaping balls, about 1 inch in size, and flatten the top
  • Melt baking chips in a double broiler or whatever your method is
  • With a teaspoon, scoop a bit of chocolate on top of each one
  • Refrigerator for about 15 minutes

 

Ready to enjoy! You can change this recipe as you see fit. It’s your taste buds.
